Facing a grave situation
Hi Gray, the preparation is important, make sure that any loose gold and masonary are rubbed away with some fine emery paper. The only other problem is not to let the gold size collect in the bottom of the inverted carved letters, as the size will dry slower because it is thicker where it has collected and the gold leaf will not adhere correctly. I always take a dust sheet and put it over the work while the size goes off, to avoid insect and dust sticking to it. Enjoy the experience, Brian.

Gray i have a book called “Signwork-A craftsmans manual” by Bill Stewart
this is what it says in the gilding chapter:-Plaster, Concrete and Stone
The surface must be dry and clean. Because they are absorbent they must be sealed with an alkali resisting primer.Thats it, best I can do mate

If the stone has been gided before there should be no need to seal the surface and you should be able to gild over the existing gold. I would use a fast gold size ( one and a half hour tack ) and if the weather is HOT, which I always think it must be in you neck of the woods!! , I would keep checking the size which is likely to go off very quickly.

Gray When we’ve done gold work we make sure the surface is clean then we painted with one shot red (let it Dry) then apply the gold leaf over the paint the red base color enhances the gold makes it mor vibraint? hope this helps!
