both will do, but depends on what you are trying to achieve, the finished look i mean. rynabond is only 3mm perspex varies.
are you cnc router cutting or by hand? if by hand and with perspex, be careful you dont split/crack it.

Perspex will last for at least 15-20 years and is solidly coloured throughout (no painting) , the gloss finish is very good and cast perspex will not drip molten flaming balls if it catches alight. It can be glued , painted , bent , vacuum formed , hot stamped and engraved and is structurally pretty stong with some degree of elasticity. It can also be VERY easily laser cut and have polished edges. We would use it any day over that sandwhich board stuff (I assume thats what it is , that aluminium sheet over phenolic resin/plastic core stuff?) as it’s far more versatile.
If routering / sawing acrylic , use the right bits , woodworking bits will stress the acylic leading to cracking and stress cracks that can develop later – especially important with extruded acrylic – you perspex supplier can give you more info.

Thanks for that… I would like a deeper finish… so, what about 10mm PVC. This is for outdoor use. My main concern is the size and weight. I have attached an image below that will show you what we are trying to acheive.

The background includes lady, new york and sandwich. Raised letters on Jacks and seperate Sandwich bar. Everything to multi layered using locators.

    Size 1200mm x 1200mm

So the quest now is: perspex, Raynobond, or foam PVC?

Many thanks for your help on this folks…
