Biggest problem with pex is that its picks up dust etc – gets static real quick. An ioniser is ideal but a wash with warmish soapy water helps just prior to application. The dust and swarf it picks up are generally responsible. You should get no bubbles if applied wet and squeegeed out from the middle to the sides and edges. Apply using the hinge type method from the middle.

Can I add to Rodney’s comments about static:

When you remove the backing paper from your vinyl you will generate thousands of volts of static. On low humidity days you can sometimes hear the crackle. Any dust on the bench will leap onto the vinyl. Thus no matter how clean the perspex is you will have dust problems, particularly on white if you are collecting, for example, foamex dust.

Clean the bench with a damp cloth. Wipe the backing paper and the vinyl face with a damp cloth. If you are applying wet, lay the vinyl on the bench, pull a small strip of backing paper away and then spray. This kills the static. Continue pulling the backing paper back and spraying in sections until removed. Then check for dust before laying the perspex on.
