  I think it is a reference to Prairie Oysters.
  That is considered a delicacy in Texas &
  other parts of the southwestern US.
  Prairie Oysters are deep-fried bull testicles.
  (I think?) They are supposed to be really yummy.
  But I wouldn’t try them! Bleccch! (<(

  I spent 20 years in NZ and there Prarie Oysters include sheep testicles – more sheep than cows in NZ.

  Shepherds who castrate lambs view them as a real delicacy – and they are seen as a “perk” of the job.
