I hate ones like this !
OK. How I’d do it is………
Create the shape with the pen tool. Type the font that you need and scale it to fit the shape created. Using Envelope Distort (use top object). That gives you the shape of the letters. Create outlines. Copy and paste in back (use a different colour to see the shadow effect) and move to the desired position. On the top lettering (in this case the blue) make an offset path to the desired width. (change this to white). Use the pathfinder tool to remove parts of the grey with this new white offset path.
Sounds as clear as mud when I’ve read it back but hopefully it will help !
How are you getting on with your XC540 Shawn ? I’ve just bought one but having a few issues so it might well be going back !
Let me know if you need any further help
Cheers

Not the most straight forward but a quick and DIRTY way is:
Create the text, outline it then add Drop Shadow (Effect>Stylize>Drop Shadow).
Set Opacity to 100% and Blur to zero. Offset it as much as you like.
When all done do Object>Expand Appearance. Now the shadow is a separate object.
Select your main text (not the shadow) and add a Stroke (the white gap). Object>Expand…>Stroke on it to make the Stroke a separate object.
At this point you should have 3 different objects: The text, the gap and the shadow. Use Pathfinder options to trim into each other.Latear edit: I used Patfinder to Unite the text and the shadow objects and make a single object. Now select this and the gap object and use Pathfinder Minus Front. This created the right paths on my screen. One for text, one for shadow.

Sorry, I forgot to say once you’ve used envelope distort, use top object you need to expand it’s appearance ! I’ve actually redrawn it very quickly but can’t post it on here for some reason ???
